Honey Oat Cookies are the best cookies I've ever had! They are quick and easy to make too. I only use Honey that comes from West Virginia bees!
Honey Oat Cookies
1 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 cup honey
1/4 teaspoon salt
1/2 teaspoon vanilla
2 eggs
3 1/4 cups flour
1 1/2 teaspoon baking soda
3 cups old fashioned oats
1 9 oz. package of chocolate chips
1 cup chopped pecan nuts
Preheat oven to 350 degrees.
Put shortening, sugar, honey, salt, vanilla and eggs in your largest mixing bowl that you can find. Beat thoroughly. Add flour and baking soda. Add oats, chocolate chips and nuts. Mix well. Drop onto greased cookie sheet. Bake for 12 to 15 minutes.
I prefer baking my cookies on my stoneware in which case you don't need to grease if your stoneware is well seasoned. I'll add pictures of the cookies later. I'm posting this recipe without pictures so that Granny Sue can make some of these delicious cookies for herself! I hope you enjoy them as much as we do!

No Bake Cookies
No Bakes Cookies are one of our favorite candies to make. The funny thing is that I only make them about 2 or 3 times a year if that. They were my mom's favorite when she was pregnant with me. She has often said that she would make a batch and eat the entire batch that day. So here's the recipe:
1/4 cup cocoa
1/4 milk
1/4 stick of butter
1 1/2 cups sugar
2 teaspoons vanilla
1/2 cup of peanut butter ~ Jiff
3 cups of old fashioned oats ~ Quaker
In a medium saucepan combine cocoa, milk, sugar and butter; bring to a boil and let cook for one minute. Remove from heat and immediately stir in peanut butter and vanilla until blended thoroughly. Add oats and mix well. Using a small ice cream scoop or a large spoon drop onto plates to cool.
I like to eat at least one while they are hot! hehehe Store in an airtight container. I don't know how long they will last like that as we usually eat them up within 2 days!
